Katy Clarke

Katy’s experience began with 2 years of employment on a Certified Organic Goat Dairy in Southwest Montana, which then motivated her to move to available family land west of Princeton, IL in the fall of 2013.  In March of 2014 Katy’s first year of vegetable production began and sales were made at the local Princeton Farmer’s Market as well as to a local restaurant and organic grocer.  In 2015 the Community Supported Agriculture Program was launched to two different small corporate offices in Roselle and Saint Charles.  Katy gives a presentation each year at the local library to share her experience as a farmer and new business owner. Three years of vegetable production as well as building the Edgewood Farm Organics business on her own has brought many challenges and equally rewards.  In 2017 the farm will join efforts with an experienced organic vegetable grower, Jon Clayshulte.

Jon Lee Clayshulte

Jon began his farming ventures out west as well.  Starting in 2007, he worked for organic farms in California, Colorado and Oregon, focusing on growing food that was healthy for people and the land.   These farms were very detailed in their methods of teaching employees good organic farming practices and methods of how to run a farm successfully.  This knowledge was essential and enabled him to rent his own land in Mancos, Colorado.  While cooking healthy meals for preschoolers at Butler Headstart in Cortez, Colorado, he also began farming on the land he was renting.  He grew diverse vegetable and herbs for farmer’s market as well as produced and sold hay. 

In March of 2015 Jon accepted a Crew Leader position at PrairiErth Farm, a Certified Organic farm in Atlanta, IL.  For the past two years he successfully led a 6 person team through the daily field tasks; providing his employers with excellent and efficient work and the crew with detailed and useful knowledge towards how to farm.  His extensive experience and knowledge will help Edgewood broaden the communities we serve and positively enhance the health and potential of the land.
